Fall muffins

FALL!!!!!!!!!!!!!!!!! Leaves changing, pumpkin patches, candles, boots, and the season premier of the Walking Dead;) It was midnight on a weekend night when these babies occurred to me. I played around with the recipe so it has minimum sugar but tastes yummy at the same time. I’m obsessed with the ingredients and the pretty Fall color they consist of. Sprinkle powder sugar on top for fun! Shouties to my hot husband for being my amazing photographer!

Ingredients:

2 ½ cups of whole-wheat flour

2 teaspoons of baking powder

2 teaspoons of cinnamon

1 teaspoon of pumpkin pie spice

2 cups of old fashioned oats

2 eggs

½ cup of brown sugar

2 smashed bananas

2 cups of canned pumpkin

1 ½ cups of milk

1 cup of crushed walnuts

Directions:

  • Preheat oven to 350 degrees
  • Combine dry ingredients
  • Mix in pumpkin, eggs, and bananas
  • Slowly add in the milk while stirring
  • Use coconut oil with a paper towel on the muffin tray
  • Bake for 15 minutes
